LOCAL DELICACIES is a course that provides student, knowledge and technique in producing products from a diversity of race and ethnic in Malaysia such as Malay, Indian, Chinese/ Nyonya and also from Borneo. Students will be familiar in grasping the knowledge of ingredients and equipment, apart from learning different cooking methods in making local products.

THEORY OF BAKERY AND PASTRY has been designed to give an introduction to bakery and pastry, layout of a pastry kitchen, basic culinary terms, and associated methods of production.
